Preparation
- Preheat oven to 400°F (200°C). If using convection, reduce to 375°F.
- In a bowl, mix breadcrumbs, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper.
- Coat each chicken breast in olive oil, then dredge in the breadcrumb mixture until fully coated.
Baking
- Place the coated chicken on a baking sheet and bake for 20–25 minutes or until cooked through at 160–165°F.
- Remove from the oven and top each piece with warmed marinara sauce and mozzarella cheese.
- Return to the oven for another 5–7 minutes to melt the cheese.
Serving
- Garnish with fresh parsley before serving.
Notes
For extra crispiness, consider pan-searing the chicken before baking or using an air fryer. Store leftovers in an airtight container.
