  • 4 pieces chicken breasts Use bone-in or boneless chicken breasts as preferred.
  • 2 tablespoons olive oil Heat until shimmering but not smoking.
  • 4 cloves garlic, minced
  • 1 tablespoon dried herbs (thyme, rosemary, or Italian seasoning) Fresh herbs are a great substitute when in season.
  • to taste Salt and pepper
  • 1 cup chicken broth Can substitute part with dry white wine.
  • 1 tablespoon soy sauce Tamari or coconut aminos can be used as substitutes.
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 2 cups mashed potatoes For serving.

Preparation
  1. Preheat the oven to 375°F (190°C). Allow the oven to settle for 10–15 minutes for accurate temperature.
  2. In a large skillet, heat olive oil over medium heat until it shimmers.
  3. Season chicken breasts with salt, pepper, and minced garlic. Sear for 4–5 minutes on each side until golden brown.
  4. In a small bowl, mix chicken broth, soy sauce, honey, and lemon juice.
  5. Pour the mixture over the chicken in the skillet and sprinkle with dried herbs.
Cooking
  1. Transfer the skillet to the preheated oven and bake for 20–25 minutes or until the chicken is cooked through to 160–165°F.
  2. Serve the chicken with creamy mashed potatoes, drizzling the pan sauce over the top.

Notes

Store leftovers in airtight containers for 3–4 days. Reheat gently to keep chicken moist. Freezing is possible; ensure proper storage to maintain texture.
