Ingredients
  

For the chicken
  • 1 lb boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
For the bowl
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 medium bell pepper, chopped
  • 1 medium avocado, sliced
  • ½ cup crumbled feta cheese
  • to taste Fresh parsley, chopped, for garnish

Method
 

Preparation
  1. Combine olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper in a mixing bowl.
  2. Add the chicken breast and coat it evenly in the marinade. Let it marinate for at least 30 minutes.
Cooking
  1. Heat a grilling pan or skillet over medium-high heat.
  2. Add the marinated chicken and cook for about 6-7 minutes on each side or until the chicken reaches an internal temperature of 165°F.
Assembly
  1. Chop the cherry tomatoes, cucumber, bell pepper, and avocado while the chicken is cooking.
  2. Allow the cooked chicken to rest for a few minutes before slicing it into strips.
  3. In serving bowls, layer the sliced chicken with the fresh vegetables, sprinkle with feta cheese, and top with chopped parsley.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. You can freeze the marinated chicken for up to three months.
