  • 3 tablespoons olive oil
  • 2 lemons Juice of 2 lemons Freshly squeezed for best flavor
  • 3 cloves garlic, minced Adds aromatic flavor
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • to taste Salt and pepper Adjust according to preference
Main Ingredients
  • 4 pieces boneless, skinless chicken breasts Use halal-friendly chicken
  • 1 cup crumbled feta cheese For topping
  • for garnish Fresh parsley

Method
 

Preparation
  1. In a mixing bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper until well combined.
  2. Place the chicken breasts in the bowl with the marinade, ensuring they are thoroughly coated. Cover and let the chicken marinate for at least 30 minutes.
Cooking
  1. Preheat your grill or skillet over medium-high heat.
  2. Once hot, add the marinated chicken breasts. Cook for about 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F).
  3. After cooking, remove the chicken from the heat and sprinkle crumble feta cheese generously over the top.
Serving
  1. Finish with a sprinkle of fresh parsley for a pop of color and freshness. Serve hot, ideally accompanied by sides like a Greek salad or roasted vegetables.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. The dish can also be frozen for up to 3 months and reheated as needed.
