Greek Meatball Bowl

Ingredients
  

For the Meatballs
  • 1 lb ground meat (beef, lamb, or turkey) Choose your preferred type of ground meat.
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • to taste Salt and pepper
For the Assembly
  • 1 cup tzatziki sauce Store-bought or homemade.
  • 2 cups cooked rice Basmati or jasmine recommended.
  • 1 cup diced cucumbers
  • 1 cup diced tomatoes
  • ½ cup sliced red onion
  • to taste Fresh parsley for garnish

Method
 

Preparation
  1. In a large bowl, combine the ground meat, breadcrumbs, grated Parmesan cheese, egg, minced garlic, oregano, salt, and pepper. Mix until everything is well blended.
  2. Form the mixture into meatballs, roughly the size of golf balls, and place them on a baking sheet.
Cooking
  1. Preheat your oven to 400°F (200°C) and bake the meatballs for about 20-25 minutes, or until they are cooked through and have a nice brown color.
  2. While the meatballs are baking, cook your rice according to package instructions.
Assembly
  1. In a bowl, start with a serving of rice at the bottom, layer on the meatballs, and finish with tzatziki sauce, diced cucumbers, tomatoes, and red onion.
  2. Sprinkle fresh parsley on top for a pop of color and flavor.

Notes

This dish can be served warm and makes excellent leftovers. Store meatballs, rice, and toppings separately in airtight containers in the refrigerator for up to 3 days. Meatballs can be frozen for up to three months.
