Preparation
- In a large mixing bowl, combine the Greek yogurt, honey, and vanilla extract. Mix until everything is well-incorporated and has a smooth texture.
- Gently fold in the fresh mixed berries. For a smoother texture, blend the berries into a puree and swirl it into the yogurt mixture.
Molding & Freezing
- Pour the yogurt and berry mixture into the popsicle molds, leaving a little space at the top for expansion as they freeze.
- Insert wooden sticks and ensure they are stable.
- Place the filled molds in the freezer for at least 4-6 hours or until completely solid.
Serving
- When you’re ready to enjoy, run the molds under warm water for a few seconds to loosen the popsicles. Carefully pull them out and serve.
Notes
These popsicles can be stored in the freezer for up to 2 months in an airtight container or wrapped individually in plastic wrap. Customize with other fruits or a splash of citrus juice.
