Greek Yogurt Popsicles

Ingredients
  

Base Ingredients
  • 2 cups Greek yogurt Plain Greek yogurt works best.
  • ¼ cup honey Can substitute with maple syrup or agave nectar.
  • 1 teaspoon vanilla extract
Filling Ingredients
  • 1 cup fresh mixed berries Use strawberries, blueberries, and raspberries.

Method
 

Preparation
  1. In a large mixing bowl, combine the Greek yogurt, honey, and vanilla extract. Mix until everything is well-incorporated and has a smooth texture.
  2. Gently fold in the fresh mixed berries. For a smoother texture, blend the berries into a puree and swirl it into the yogurt mixture.
Molding & Freezing
  1. Pour the yogurt and berry mixture into the popsicle molds, leaving a little space at the top for expansion as they freeze.
  2. Insert wooden sticks and ensure they are stable.
  3. Place the filled molds in the freezer for at least 4-6 hours or until completely solid.
Serving
  1. When you’re ready to enjoy, run the molds under warm water for a few seconds to loosen the popsicles. Carefully pull them out and serve.

Notes

These popsicles can be stored in the freezer for up to 2 months in an airtight container or wrapped individually in plastic wrap. Customize with other fruits or a splash of citrus juice.
