Ingredients
  

Chicken and Marinade
  • 2 pounds chicken breast, cut into cubes Fresh chicken breast works best.
  • ½ cup cowboy butter or melted unsalted butter with garlic, parsley, and spices Use homemade cowboy butter for added flavor.
  • to taste salt and pepper Adjust according to preference.
Equipment
  • 1 set wooden or metal skewers If using wooden skewers, soak them in water for 30 minutes.
  • 1 mixing bowl For marinating the chicken.
  • 1 grill thermometer To check cooking temperature.
  • 1 basting brush For applying cowboy butter while grilling.

Method
 

Preparation
  1. In a large bowl, mix the chicken cubes with cowboy butter, salt, and pepper until evenly coated.
  2. Let the chicken sit for at least 30 minutes to marinate. For better results, marinate overnight in the refrigerator.
Grilling
  1. Preheat your grill to medium-high heat (around 375°F to 450°F).
  2. Thread the marinated chicken onto skewers.
  3. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice char marks.
  4. Remove from grill and serve hot, garnished with additional cowboy butter if desired.

Notes

Leftover skewers can be stored in the refrigerator for up to 3 days. For variations, consider roasting or adding vegetables like bell peppers or zucchini to the skewers.
