Preparation
- In a large bowl, mix the chicken cubes with cowboy butter, salt, and pepper until evenly coated.
- Let the chicken sit for at least 30 minutes to marinate. For better results, marinate overnight in the refrigerator.
Grilling
- Preheat your grill to medium-high heat (around 375°F to 450°F).
- Thread the marinated chicken onto skewers.
- Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice char marks.
- Remove from grill and serve hot, garnished with additional cowboy butter if desired.
