Ingredients
  

Main Ingredients
  • 2 pieces ripe peaches Cut in half and pitted
  • 1 cup blueberries Fresh blueberries
  • 4 cups mixed greens Any combination of greens
  • ½ cup feta cheese Crumble over the salad
Vinaigrette
  • 2 tablespoons olive oil For grilling and vinaigrette
  • 1 tablespoon balsamic vinegar Adds tanginess to the vinaigrette
  • to taste salt and pepper For seasoning

Method
 

Preparation
  1. Preheat your grill to medium heat.
  2. Cut the peaches in half and remove the pits. Brush the cut sides with olive oil.
Grilling
  1. Place the peaches cut side down on the grill and grill for about 4-5 minutes until caramelized.
Mixing Ingredients
  1. In a large bowl, combine mixed greens and blueberries.
  2. Slice the grilled peaches into wedges and add them to the bowl.
  3. Crumble feta cheese over the salad.
Vinaigrette Preparation
  1. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
Serving
  1. Drizzle the vinaigrette over the salad and gently toss everything together.
  2. Serve immediately for the best flavor.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Keep the vinaigrette separate until serving to prevent wilting. This dish does not freeze well.
