For the Grilled Peaches
  • 4 pieces peaches, halved and pitted Choose ripe, juicy peaches for best flavor.
  • 2 tablespoons olive oil Used for brushing peaches for grilling.
  • Salt and pepper to taste
For the Balsamic Chicken
  • 1 pound boneless, skinless chicken breasts Ensure they are evenly sized for even cooking.
  • ¼ cup balsamic vinegar
  • 2 tablespoons honey Adds sweetness to the glaze.
  • 1 teaspoon garlic powder
  • Fresh basil for garnish Use fresh basil to enhance flavor.

Method
 

Preparation
  1. Start by preheating your grill to medium-high heat for about 10-15 minutes.
  2. Brush the peach halves with olive oil, and season them with salt and pepper.
  3. In a mixing bowl, combine the balsamic vinegar, honey, garlic powder, salt, and pepper. Whisk until well blended.
  4. Brush the chicken breasts with olive oil and season generously with salt and pepper.
Grilling
  1. Place the peach halves cut-side down on the grill and grill for about 3-4 minutes until grill marks appear.
  2. Remove the peaches from the grill and set aside.
  3. Add the chicken breasts to the grill and cook for about 6-7 minutes on each side, or until they reach an internal temperature of 165°F.
  4. In the last few minutes of cooking, brush the chicken with the balsamic mixture to allow it to caramelize.
Serving
  1. Once the chicken is fully cooked, remove it from the grill and let it rest for a couple of minutes.
  2. Serve the grilled chicken garnished with fresh basil, alongside the grilled peaches.
