Preparation
- Start by preheating your grill to medium-high heat for about 10-15 minutes.
- Brush the peach halves with olive oil, and season them with salt and pepper.
- In a mixing bowl, combine the balsamic vinegar, honey, garlic powder, salt, and pepper. Whisk until well blended.
- Brush the chicken breasts with olive oil and season generously with salt and pepper.
Grilling
- Place the peach halves cut-side down on the grill and grill for about 3-4 minutes until grill marks appear.
- Remove the peaches from the grill and set aside.
- Add the chicken breasts to the grill and cook for about 6-7 minutes on each side, or until they reach an internal temperature of 165°F.
- In the last few minutes of cooking, brush the chicken with the balsamic mixture to allow it to caramelize.
Serving
- Once the chicken is fully cooked, remove it from the grill and let it rest for a couple of minutes.
- Serve the grilled chicken garnished with fresh basil, alongside the grilled peaches.
