Preparation
- In a mixing bowl, combine olive oil, lime juice, cumin, salt, and pepper. Add the chicken and marinate for at least 10 minutes.
- While the chicken is marinating, preheat your grill to medium-high heat.
Cooking
- Place the marinated chicken on the grill. Cook for about 6-7 minutes on each side or until the chicken reaches an internal temperature of 165°F (75°C).
- Once the chicken is cooked, remove it from the grill, and coat each piece with salsa verde.
- Place a slice of pepper Jack cheese on top of each chicken breast and close the grill lid for 1-2 minutes to melt the cheese.
Serving
- Garnish with minced cilantro and serve with lime wedges on the side.
Notes
Ensure not to overcook the chicken to keep it tender and juicy. Use a meat thermometer to check for doneness. If you like it spicier, consider adding jalapeños to the salsa verde.
