  • 1.5 pounds thin-sliced boneless skinless chicken breasts About 4 breasts; tender and easy to cook through.
  • 3 tablespoons olive oil For grilling and a touch of richness.
  • 2 tablespoons lime juice Brightens up flavors.
  • 1 teaspoon cumin For a warm, earthy taste.
  • 1 teaspoon salt Or more, to taste; enhances overall flavor.
  • 1 teaspoon freshly ground black pepper Adds a mild kick.
  • 4 slices pepper Jack cheese Or as desired; gives a creamy, spicy finish.
For Garnishing
  • to taste fresh cilantro, finely minced Optional, for garnishing.
  • as needed lime wedges Optional, for serving.
  • 12 ounces salsa verde Trader Joe’s recommended; adds a tangy, zesty flavor.

Method
 

Preparation
  1. In a mixing bowl, combine olive oil, lime juice, cumin, salt, and pepper. Add the chicken and marinate for at least 10 minutes.
  2. While the chicken is marinating, preheat your grill to medium-high heat.
Cooking
  1. Place the marinated chicken on the grill. Cook for about 6-7 minutes on each side or until the chicken reaches an internal temperature of 165°F (75°C).
  2. Once the chicken is cooked, remove it from the grill, and coat each piece with salsa verde.
  3. Place a slice of pepper Jack cheese on top of each chicken breast and close the grill lid for 1-2 minutes to melt the cheese.
Serving
  1. Garnish with minced cilantro and serve with lime wedges on the side.

Notes

Ensure not to overcook the chicken to keep it tender and juicy. Use a meat thermometer to check for doneness. If you like it spicier, consider adding jalapeños to the salsa verde.
