Preparation
- If rice is uncooked, prepare according to package directions, then fluff and set aside.
- In a large skillet over medium heat, add a tablespoon of oil and sauté the sliced onions, diced green peppers, and sliced mushrooms for 5-7 minutes until soft.
- Wipe the skillet if needed and return to medium-high heat. Add the ground beef, breaking it into pieces. Cook for 6-8 minutes until evenly browned.
- Stir in the seasoned soy sauce and beef broth, scrape the bottom of the pan, and simmer for 2-3 minutes.
- Add the sautéed veggies back into the skillet with the beef, mix well, and warm through.
- Sprinkle cheese over the mixture, cover with a lid, and cook on low for 2-4 minutes until melted.
- Divide rice into meal prep containers, spoon cheesesteak mix over rice, and cool before sealing.
Notes
This recipe makes about eight lunch-sized portions. Adjust for larger appetites. Consider meal prep for the week or freezing components separately.
