  • 2 tablespoons shawarma spice blend Store-bought or homemade.
Oil and Seasoning
  • 1 tablespoon olive oil Extra virgin or avocado oil for higher smoke point.
  • Salt and black pepper To taste.
Carb Base
  • 1 cup cooked rice or quinoa Use quinoa for a gluten-free option.
Fresh Toppings
  • 1 cup cherry tomatoes, halved Use whichever is in season.
  • 1 medium cucumber diced English or Persian cucumbers are preferred.
  • ½ small red onion, thinly sliced Soak in cold water for 5 minutes if desired.
  • ¼ cup fresh parsley, chopped Flat-leaf parsley is best for bright flavor.
Sauce
  • Tahini or yogurt sauce for serving Plain Greek yogurt is a tangy alternative.

Method
 

Cooking the Beef
  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground beef and break it into pieces with a spatula. Brown the meat by stirring occasionally.
  3. Once browned, season with shawarma spices, salt, and pepper. Cook for an additional 4-5 minutes.
Preparing the Base
  1. If using cold rice or quinoa, reheat it gently and keep warm.
  2. Fluff cooked grains with a fork before serving.
Chopping Vegetables
  1. While the beef cooks, prepare the fresh toppings: halve cherry tomatoes, dice cucumber, slice red onion, and chop parsley.
Assembling Bowls
  1. In serving bowls, spoon rice or quinoa, top with spiced ground beef, and arrange the fresh toppings.
  2. Drizzle with tahini or yogurt sauce before serving.
