Eggs and Fillings
  • 6 pieces hard boiled eggs (halved) Ensure the eggs are well-cooked and peeled.
  • 2 slices thick-cut bacon (cooked crisp and broken into 1-inch pieces) Bacon should be crispy for added crunch.
  • 3 slices cheddar cheese (quartered) Feel free to use other cheese varieties for a twist.
  • 1 leaf Lettuce Romaine or Iceberg for a crunchy texture.
  • 3 slices Roma tomatoes (thinly sliced) Tomatoes can be roasted for added flavor.
  • 1 tablespoon mayonnaise Use low-fat mayo for a healthier option.
  • 1 teaspoon mustard Adds a nice tang.
  • to taste salt & freshly cracked black pepper Season according to personal preference.

Method
 

Preparation
  1. Carefully slice your hard-boiled eggs in half. Remove the yolks with a spoon and place the bottom halves on a serving platter.
Assembly
  1. Take the bottom half of an egg and top it with a piece of lettuce for a refreshing layer.
  2. Add a thin slice of Roma tomato over the lettuce, followed by a quarter of cheddar cheese.
  3. Lay a piece of crisp bacon on top of the cheese to bring in that delicious crunch.
Finish
  1. Squirt a small amount of mustard and add a tiny dollop of mayonnaise on top of the bacon.
  2. Place the egg's top half back on to close the egg bite.
  3. Pierce the assembled egg bite through the center with a toothpick to hold everything together.
  4. Season with salt and freshly cracked black pepper according to your taste.
Serving
  1. Repeat the assembly steps until all your BLT egg bites are assembled. Transfer them to a beautiful serving platter and enjoy!

Notes

These bites are best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to two days. For meal prep, store individual components separately to keep them fresh. Avoid freezing toppings to maintain texture.
