Ingredients
  

Chicken
  • 4 pieces chicken, thighs or breasts Thighs give juicier results; breasts are leaner.
Marinade liquids and seasoning
  • ½ cup pineapple juice Preferably 100 percent juice with no added sugar.
  • ¼ cup soy sauce Use low sodium if controlling salt intake.
  • 2 tablespoons fresh ginger, grated Substitute 1 tablespoon ground ginger if fresh is unavailable.
  • 2 tablespoons brown sugar, packed Use light brown for milder molasses notes.
  • 1 tablespoon garlic, minced About 2 small cloves; jarred minced garlic works in a pinch.
  • 1 tablespoon vegetable oil Neutral oils like canola or avocado oil are fine.
  • to taste salt and pepper Season lightly as soy sauce adds saltiness.
Garnish
  • to taste Green onions, thinly sliced For bright, fresh finish.

Method
 

Preparation
  1. In a medium bowl, whisk together the pineapple juice, soy sauce, grated ginger, brown sugar, minced garlic, vegetable oil, and a pinch of salt and pepper until the sugar dissolves.
  2. Place the chicken pieces into a resealable plastic bag or shallow dish. Pour the marinade over the chicken, coat well, and refrigerate for at least 1 hour, preferable overnight.
Grilling
  1. Heat your grill to medium-high heat, and oil the grates or lightly brush oil on the chicken.
  2. Remove chicken from marinade, letting excess drip off, and discard marinade.
  3. Grill chicken for about 6 to 7 minutes per side until fully cooked and charred at the edges.
  4. Remove from the grill and let it rest for 5 to 7 minutes. Before serving, sprinkle with chopped green onions.

Notes

Pat dry the chicken before marinating for better sear. For added depth, consider saving a reserved portion of the marinade, boil it, and brush it on during the last minute of grilling.
