  • ½ cup corn kernels (fresh or frozen)
  • ½ avocado diced
  • ¼ cup red onion, thinly sliced
  • ½ cup barbecue sauce (ensure it's halal)

Chicken Salad with Blueberries
  • 2 cups cooked chicken, shredded
  • 1 cup blueberries, fresh or frozen
  • ½ cup Greek yogurt (plain)
  • 2 tbsp honey
  • 1 tsp lemon juice
  • ¼ cup walnuts, chopped
  • 2 stalks celery, diced

Cucumber Tomato Avocado Salad
  • 1 unit cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 avocado diced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice

Method
 

Barbecue Chicken Salad
  1. Begin by grilling the chicken breasts until fully cooked. Season with salt and pepper for added flavor.
  2. In a large bowl, combine the mixed greens, cherry tomatoes, corn, avocado, and red onion.
  3. Once the chicken has cooled slightly, add it to the salad mixture.
  4. Drizzle the halal barbecue sauce over the salad and toss gently to combine all ingredients.
  5. Enjoy immediately or store in meal prep containers for later use.
Chicken Salad with Blueberries
  1. In a mixing bowl, combine the shredded chicken, blueberries, and chopped celery.
  2. In a separate bowl, whisk together Greek yogurt, honey, and lemon juice until smooth.
