  • 2 cups vegetable broth Can substitute with water.

  • 1 piece red bell pepper (diced) Adds color and crunch.
  • 1 piece avocado (sliced) For creaminess.
  • 1 tablespoon juice of lime Enhances freshness.

Method
 

Cooking Quinoa
  1. In a saucepan, bring the vegetable broth to a boil.
  2. Add the rinsed quinoa and reduce to a simmer; cover and cook for 15 minutes.
Combining Ingredients
  1. Once the quinoa is fluffy, mix in the black beans and diced red bell pepper.
  2. Squeeze lime juice over the mixture and season with salt and pepper.

Notes
