Ingredients
  

For the Cake
  • 1 box yellow cake mix (15.25 oz)
  • 1 can crushed pineapple, undrained (20 oz)
For the Cream Cheese Layer
  • 1 package cream cheese, softened (8 oz)
  • 1 cup powdered sugar
  • 1 tub whipped topping, thawed (8 oz)
Optional Toppings
  • 1 cup chopped nuts optional for garnish
  • Fresh fruit for topping optional, such as strawberries or blueberries

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour your 9x13 inch cake pan.
  2. Prepare the yellow cake mix according to package instructions and pour it into your prepared pan.
  3. Bake for about 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow it to cool completely in the pan.
Cream Cheese Layer
  1. While the cake cools, beat the cream cheese and powdered sugar together in a medium bowl until the mixture is smooth and creamy.
  2. Once your cake has cooled, spread the cream cheese mixture evenly over the top.
Topping the Cake
  1. Top the cake with the crushed pineapple, including some juice for added moisture.
  2. Evenly spread the whipped topping over the pineapple layer.
  3. If you desire a bit of crunch, sprinkle chopped nuts on top.
Chill and Serve
  1. Refrigerate the cake for at least an hour to allow the flavors to meld and the layers to set.
  2. Serve the Heaven on Earth Cake as a standalone dessert or with a scoop of vanilla ice cream for an extra treat.

Notes

To store leftovers, keep the cake in an airtight container in the refrigerator for up to a week. If made ahead, the flavors enhance as it sits. The cake can also be frozen for about 3 months.
