  • 1 cup All-purpose flour (Gluten-free flour can be used.)
  • ¼ cup Granulated sugar (Coconut sugar can be used for a less refined option.)
  • 1 tablespoon Baking powder (Avoid substituting directly with baking soda.)
  • ¼ teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1 large Egg (Can substitute with a flax egg for vegan option.)
  • ½ cup Milk (Dairy-free milk can be used.)
  • 1 whole Fresh pineapple (Sliced into rings.)
  • 2 cups Vegetable oil (Canola or coconut oil can be used.)
  • 1 tablespoon Additional cinnamon and sugar (Adjust mixture to liking.)

Method
 

Preparation
  1. Slice the fresh pineapple into rings, ensuring they are about 1/2 inch thick for optimal frying.
  2. In a mixing bowl, combine the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the egg and milk, then gradually add this mixture to the dry ingredients. Stir until just combined, making sure not to over-mix.
Cooking
  1. In a frying pan or deep fryer, heat the vegetable oil to 350°F (175°C).
  2. Dip each pineapple ring into the batter, ensuring it’s fully coated, then carefully lower it into the hot oil.
  3. Fry a few fritters at a time, ensuring not to overcrowd the pan.
  4. Cook for about 2-3 minutes on each side, or until golden brown.
  5. Once cooked, use a slotted spoon to remove the fritters and place them on paper towels to drain any excess oil.
  6. While the fritters are still warm, sprinkle the additional cinnamon and sugar mixture over them for that extra touch of sweetness.

Notes

Leftover fritters can be stored in an airtight container at room temperature for up to two days. To maintain their crispy texture, reheat in an oven at 350°F (175°C) for about 5-10 minutes. These fritters can also be frozen for up to three months.
