Preparation
- Preheat your oven to 350°F (175°C). Confirm temperature with an oven thermometer.
- In a bowl, whisk together the egg whites and cottage cheese until smooth. For the creamiest texture, blend for 10–15 seconds.
- Stir in the diced bell peppers, chopped spinach, and shredded cheese. Mix thoroughly.
- Season with salt and pepper to taste.
- Grease a muffin tin and pour the mixture evenly into the cups, filling to about 3/4 full.
Cooking
- Bake for 15–20 minutes until set and lightly golden. A toothpick should come out mostly clean.
- Allow to cool slightly before removing from the tin. Serve warm.
Notes
Leftover bites can be stored in an airtight container for up to 4 days in the fridge. For freezing, flash-freeze baked bites on a tray for 1-2 hours before transferring to a labeled freezer bag.
