Main Ingredients
  • 1 lb ground turkey (lean) Use 93/7 or 90/10 for best texture.
  • 4 oz cream cheese, softened Remove from fridge 15-20 minutes before cooking.
  • 5 oz fresh spinach, chopped or whole Chop for even distribution; use whole for bigger leaves.
  • 1 cup cheddar cheese, freshly shredded (divided: ½ cup + ½ cup) Optional: substitute with mozzarella cheese.
  • 1 large egg Beaten and added to the cooled mixture.
  • ½ tsp garlic powder
  • ¼ tsp salt
  • black pepper, to taste
  • ½ cup diced red bell peppers (optional) Add for sweetness.
  • ¼ cup plain Greek yogurt (optional) For added creaminess and protein.

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and grease a 9×9 baking dish.
Cook Turkey
  1. In a large skillet over medium heat, cook 1 lb ground turkey for 6–8 minutes until browned.
Add Seasoning
  1. Stir in garlic powder, salt, and black pepper.
Add Spinach
  1. Add 5 oz spinach (and diced bell pepper, if using) and cook until wilted.
Make it Creamy
  1. Reduce heat and stir in softened cream cheese until melted and combined.
Finish Mixture
  1. Let the skillet cool for 5 minutes, then stir in the beaten egg and ½ cup cheddar cheese.
  2. Add Greek yogurt if desired.
Assemble and Bake
  1. Transfer mixture to the greased baking dish, sprinkle remaining cheddar cheese on top.
  2. Bake uncovered for 20–25 minutes until bubbly and golden.
Serve
  1. Remove from oven and let rest for 10 minutes before slicing.

Notes

Store leftovers in an airtight container for up to 3–4 days. Casserole can be frozen for up to 3 months. Thaw and reheat as needed.
