Preparation
- Preheat oven to 375°F (190°C) and grease a 9×9 baking dish.
Cook Turkey
- In a large skillet over medium heat, cook 1 lb ground turkey for 6–8 minutes until browned.
Add Seasoning
- Stir in garlic powder, salt, and black pepper.
Add Spinach
- Add 5 oz spinach (and diced bell pepper, if using) and cook until wilted.
Make it Creamy
- Reduce heat and stir in softened cream cheese until melted and combined.
Finish Mixture
- Let the skillet cool for 5 minutes, then stir in the beaten egg and ½ cup cheddar cheese.
- Add Greek yogurt if desired.
Assemble and Bake
- Transfer mixture to the greased baking dish, sprinkle remaining cheddar cheese on top.
- Bake uncovered for 20–25 minutes until bubbly and golden.
Serve
- Remove from oven and let rest for 10 minutes before slicing.
Notes
Store leftovers in an airtight container for up to 3–4 days. Casserole can be frozen for up to 3 months. Thaw and reheat as needed.
