  • 4 pieces Soft flour or corn tortillas, about 8 inches Choose your favorite size; pliable tortillas that fold without cracking.
  • 2 cups Salsa chicken, pre-cooked shredded Tossed with your favorite salsa.
  • 1 cup Refried beans Smooth or chunky, warmed slightly for easy spreading.
  • 2 cups Grated cheese, such as cheddar or Monterey Jack Use freshly grated cheese for better melting.
  • 2 tablespoons Cooking oil A neutral oil with a high smoke point, such as vegetable or canola.

Method
 

Preparation
  1. Heat a skillet over medium heat and add a little oil.
  2. Place a tortilla in the skillet and layer half with salsa chicken, refried beans, and cheese.
  3. Fold the tortilla over and cook until golden brown on both sides and cheese is melted.
  4. Repeat with remaining tortillas and fillings.
  5. Cut into wedges and serve.

Notes

Serve hot with sides like sour cream, guacamole, and extra salsa for dipping. Store leftovers in an airtight container in the refrigerator for up to 3 days.
