  • 1 lb chicken tenderloins Boneless and skinless
  • 2 tablespoons olive oil For cooking

For the Sauce
  • ¼ cup honey To balance the saltiness
  • ¼ cup soy sauce Use tamari for gluten-free
  • 4 cloves garlic, minced For flavor

Preparation
  1. In a bowl, whisk together honey, soy sauce, minced garlic, grated ginger, a pinch of salt, and pepper until combined. Optionally blend for a smoother sauce.
Cooking the Chicken
  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Season chicken lightly with salt and pepper, then add to the pan in a single layer. Cook for 2-3 minutes on each side until golden brown.
  3. Pour the sauce over the chicken and bring to a simmer. Reduce heat to medium-low and cook for 4-6 minutes until chicken is cooked through.
  4. Stir in sliced bell pepper and broccoli florets, cooking for an additional 3-5 minutes until vegetables are tender-crisp.
Serving
  1. Plate the chicken and vegetables, spoon over additional sauce, and garnish with chopped green onions. Serve hot.

Notes

Store leftovers in an airtight container for 3-4 days. The dish can be reheated in a skillet with a splash of water or broth. For meal prep, it can be frozen for up to 3 months.
