Ingredients
  

Chicken and Sauce
  • 1.5 pounds chicken breast (cubed) Trimmed and cut into bite-sized pieces
  • ⅓ to ½ cup honey Depending on desired sweetness
  • 3-4 cloves garlic (minced) To taste
  • ¼ cup soy sauce Use low-sodium if preferred
  • 1-2 tablespoons olive oil For cooking
  • to taste salt Start with 1/2 teaspoon

  • vegetables (for serving, optional) Steamed broccoli, roasted carrots, snap peas, etc.
  • rice (for serving, optional) Jasmine, brown rice, or cauliflower rice for a lighter option

Method
 

Cooking Chicken
  1. In a skillet, heat olive oil over medium heat. Make sure the pan is hot before adding chicken so pieces brown nicely instead of steaming.
  2. Add cubed chicken and season with salt and pepper. Cook until golden brown, about 6-8 minutes, depending on the size of the cubes.
  3. In a bowl, mix honey, garlic, and soy sauce. Pour over cooked chicken and stir until well coated.
  4. Simmer on low for 2-4 minutes until the sauce thickens slightly. For a thicker glaze, stir in cornstarch slurry and cook another minute.
  5. Serve over rice or with vegetables. Garnish with sliced green onions, sesame seeds, or lime.

Notes

If you like a thicker glaze, add a teaspoon of cornstarch mixed with 1 tablespoon cold water to the sauce. For a gluten-free version, use tamari instead of soy sauce. Store leftovers in an airtight container for up to 3-4 days.
