Honey Lime Chicken with Mango Salsa

Ingredients
  

For the Chicken
  • 4 pieces chicken breasts
  • ¼ cup honey Use a good quality honey for best flavor.
  • ¼ cup lime juice Freshly squeezed is recommended.
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
For the Salsa
  • 1 piece avocado, diced Use ripe but firm avocados.
  • 1 piece mango, diced
  • ¼ piece red onion, diced
  • ¼ cup cilantro, chopped
  • 1 piece lime, juiced

Method
 

Marinade Preparation
  1. In a bowl, whisk together the honey, lime juice, minced garlic, salt, and black pepper until well combined. Taste and adjust lime juice if necessary.
Marinating the Chicken
  1. Marinate the chicken in the honey-lime mixture for at least 30 minutes, ideally 2-4 hours. Reserve some marinade for glazing, if desired.
Cooking the Chicken
  1. Preheat your grill to medium heat (350-400°F) or the oven to 425°F. If grilling indoors, lightly oil the grill pan.
  2. Grill or bake the chicken until cooked through and golden brown, about 6-7 minutes per side. Brush reserved marinade during the last 1-2 minutes of cooking.
  3. Let the chicken rest for 5 minutes before slicing.
Salsa Preparation
  1. In a bowl, combine diced mango, avocado, red onion, cilantro, and lime juice. Season lightly with salt and black pepper, and gently toss.
Serving
  1. Serve the chicken topped with mango salsa, alongside rice, salad, or warmed tortillas.

Notes

Store leftover chicken in separate airtight containers for 3-4 days. Salsa is best consumed within 1-2 days. Marinate the chicken up to 24 hours before cooking for deeper flavor.
