Marinade Preparation
- In a bowl, whisk together the honey, lime juice, minced garlic, salt, and black pepper until well combined. Taste and adjust lime juice if necessary.
Marinating the Chicken
- Marinate the chicken in the honey-lime mixture for at least 30 minutes, ideally 2-4 hours. Reserve some marinade for glazing, if desired.
Cooking the Chicken
- Preheat your grill to medium heat (350-400°F) or the oven to 425°F. If grilling indoors, lightly oil the grill pan.
- Grill or bake the chicken until cooked through and golden brown, about 6-7 minutes per side. Brush reserved marinade during the last 1-2 minutes of cooking.
- Let the chicken rest for 5 minutes before slicing.
Salsa Preparation
- In a bowl, combine diced mango, avocado, red onion, cilantro, and lime juice. Season lightly with salt and black pepper, and gently toss.
Serving
- Serve the chicken topped with mango salsa, alongside rice, salad, or warmed tortillas.
Notes
Store leftover chicken in separate airtight containers for 3-4 days. Salsa is best consumed within 1-2 days. Marinate the chicken up to 24 hours before cooking for deeper flavor.
