Preparation
  1. Line a baking sheet with parchment paper and lightly grease it with oil.
Cooking
  1. In a medium saucepan, combine granulated sugar, honey, and water over medium heat.
  2. Stir gently until the sugar dissolves, then stop stirring to prevent crystallization.
  3. Let the mixture cook until it reaches a deep golden amber color, approximately 150 degrees Celsius.
  4. Remove from heat and quickly add baking soda, stirring fast but gently until foamy.
  5. Immediately pour the foamy mixture onto the prepared baking sheet.
  6. Allow the candy to cool completely at room temperature without touching it.
  7. Once cooled, break the candy into pieces using your hands or a spoon.

Notes

Use a heavy-bottom saucepan to distribute heat evenly. Watch the color to avoid burning. Store in an airtight container to maintain crispness. Humidity can affect the texture, so plan to make it on dry days.
