  • 2 cups Rice or grains (quinoa, farro, etc.) Cook according to package instructions
  • 2 cups Mixed vegetables (bell peppers, cucumbers, carrots, etc.) Chopped for topping
  • 1 tsp Salt To taste
  • 1 tsp Pepper To taste

Preparation
  1. Cook your choice of rice or grains according to the package instructions, ideally using broth for added flavor.
  2. In a skillet, heat olive oil over medium heat until shimmering.
  3. Season the chicken breast generously with salt and pepper. Once the skillet is hot, add the chicken.
Cooking
  1. Sear the chicken until golden brown on one side (about 5-7 minutes), then flip and cook until fully cooked through (165°F internal temperature).
  2. Pour hot honey sauce over the cooked chicken. For more flavor, make your own sauce by mixing honey with red pepper flakes or cayenne.
Assembly
  1. Layer a generous amount of cooked rice or grains in a bowl. Top with the glazed chicken and sliced vegetables for freshness.
  2. Serve and enjoy!

Notes

For extra spice, consider adding sliced jalapeños or chili powder. This dish can be stored in airtight containers in the refrigerator for up to 3 days. It can also be prepped ahead of time; cook and store chicken and grains separately.
