Preparation
- Preheat your oven to 400°F (200°C).
- Peel the onion and trim both ends. Use a melon baller to scoop out a well from the top center.
- Place the onion on a sheet of aluminum foil. Add the vegan butter into the well.
- Whisk together olive oil and Cajun seasoning, pour into the well, letting it coat the layers.
- Sprinkle salt over the top and around the onion.
- Seal the foil tightly around the onion and place in a baking dish.
Baking
- Bake the onion for 45–60 minutes, checking after 45 minutes for doneness.
- Once tender, turn on the broiler. Open the foil, drizzle more butter or olive oil on top, and add extra salt.
- Broil for 5–10 minutes until the top is golden brown.
Serving
- Remove the onion from the oven, peel away the outer layer, and pour any collected juices over the top.
- Serve warm with rice, roasted vegetables, or bread.
Notes
Store cooled onion in an airtight container for 3–4 days or freeze for up to 2 months. Reheat gently in the oven.
