Ingredients
  

For the roasted center-cut onion
  • 1 large sweet onion (about 15 ounces), peeled and both ends trimmed Choose a sweet yellow or Vidalia-style onion for best caramelization.
  • 1 tablespoon vegan butter (or regular unsalted butter if preferred) Soft or melted for easy filling.
  • 1 tablespoon extra virgin olive oil Adds silkiness and helps seasonings slip between layers.
  • 1 teaspoon Cajun seasoning Provides warmth; adjust to taste.
  • ¼ teaspoon fine salt Plus more to taste when serving.
  • ¼ teaspoon garlic powder Optional, great for layering flavors.
  • ¼ teaspoon Old Bay seasoning Optional, great for layering flavors.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel the onion and trim both ends. Use a melon baller to scoop out a well from the top center.
  3. Place the onion on a sheet of aluminum foil. Add the vegan butter into the well.
  4. Whisk together olive oil and Cajun seasoning, pour into the well, letting it coat the layers.
  5. Sprinkle salt over the top and around the onion.
  6. Seal the foil tightly around the onion and place in a baking dish.
Baking
  1. Bake the onion for 45–60 minutes, checking after 45 minutes for doneness.
  2. Once tender, turn on the broiler. Open the foil, drizzle more butter or olive oil on top, and add extra salt.
  3. Broil for 5–10 minutes until the top is golden brown.
Serving
  1. Remove the onion from the oven, peel away the outer layer, and pour any collected juices over the top.
  2. Serve warm with rice, roasted vegetables, or bread.

Notes

Store cooled onion in an airtight container for 3–4 days or freeze for up to 2 months. Reheat gently in the oven.
