For the Chicken
  • 2 pieces chicken breasts Skinless and boneless
  • 2 pieces ripe avocados California avocados
  • 1 cup cherry tomatoes, halved
  • 2 pieces limes, juiced Freshly squeezed
  • 2 tablespoons olive oil Plus extra for grilling
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • to taste salt and pepper
  • for garnish fresh cilantro Optional

Method
 

Preparation
  1. In a mixing bowl, combine the lime juice, olive oil, garlic powder, cumin, salt, and pepper.
  2. Place the chicken breasts into the marinade, ensuring they are fully coated. Cover and let marinate for at least 30 minutes.
Grilling
  1. Preheat your grill to medium-high heat.
  2. Grill the chicken for 6-7 minutes on each side or until cooked through, checking with a meat thermometer for an internal temperature of 165°F (74°C).
Preparation of Avocados and Tomatoes
  1. While the chicken is grilling, slice the avocados and halve the cherry tomatoes.
  2. Remove the pit from avocados and cut into thick slices.
Serving
  1. Once grilled, let the chicken rest for a few minutes before plating.
  2. Top the chicken with avocado slices, cherry tomatoes, and fresh cilantro.

Notes

For an alternative cooking method, roast the chicken at 375°F (190°C) for 25-30 minutes. To add heat, consider incorporating red pepper flakes or cayenne into the marinade.
