  • 24 slices pepperoni Choose thick-cut or deli-style pepperoni for better cup shape.
  • 1 cup shredded mozzarella cheese Grating your own mozzarella yields better melting.
  • ¼ cup grated parmesan cheese Adds a nutty bite and saltiness.
  • ½ teaspoon Italian seasoning Optional but recommended for classic pizza flavor.
  • 2 tablespoons low sugar pizza sauce Optional; can substitute with pesto for different flavor.
  • as needed cooking spray or olive oil For greasing the muffin pan.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Position the rack in the center for even heat distribution.
  2. Lightly grease a mini muffin pan with cooking spray or brush with olive oil.
  3. Place one slice of pepperoni into each muffin cup, pressing gently to form cups. If using small slices, double them up.
Filling and Baking
  1. In a bowl, mix mozzarella, parmesan, and Italian seasoning until combined.
  2. Add a small spoonful of cheese mixture on top of each pepperoni cup, leaving a little room for sauce if desired.
  3. If using sauce, add a small dot underneath or over the cheese.
  4. Bake for 10 to 12 minutes, until cheese is golden and bubbly.
  5. Let cool for 5 minutes before removing from the pan using a fork or knife if needed.

Notes

Refrigerate leftovers in an airtight container for up to 4 days. Can freeze for up to 2 months. To reheat, use the oven or air fryer for crispy results.
