  • 2 medium zucchinis Sliced lengthwise
  • 1 cup ricotta cheese Provides a creamy texture
  • 1 cup marinara sauce Use pre-made for convenience if desired
  • 1 cup shredded mozzarella cheese For topping
  • 1 tablespoon olive oil For brushing zucchini
  • to taste Salt and pepper For seasoning
  • as needed Fresh basil For garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the zucchinis lengthwise into thin strips, aiming for uniform thickness.
  3. Brush the zucchini slices with olive oil and sprinkle with salt and pepper.
Layering and Baking
  1. In your baking dish, start layering zucchini slices, spreading ricotta cheese on top of each layer.
  2. Over the ricotta, pour a layer of marinara sauce and sprinkle mozzarella cheese on top.
  3. Continue layering until all ingredients are used, finishing with a layer of mozzarella.
  4. Bake in the preheated oven for about 15-20 minutes, or until the cheese is bubbly and golden.
  5. Garnish with fresh basil before serving.

Notes

Feel free to add roasted bell peppers or spinach for extra flavor and nutrients. Leftovers can be stored in an airtight container for up to three days, and the dish can also be frozen for approximately two months.
