  • ½ cup blueberries (fresh or frozen) If using frozen, thaw and drain slightly.
  • 2 tablespoons honey or maple syrup Adjust for sweetness.
  • 1 tablespoon lemon juice Fresh is best.
  • 1 lemon zest of 1 lemon
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Preparation
  1. In a mixing bowl, combine cottage cheese, oats, honey (or maple syrup), lemon zest, lemon juice, vanilla extract, and salt. Mix until well combined.
  2. Gently fold in the blueberries.
  3. Scoop the mixture into small bite-sized portions and shape them into balls or bites.
  4. Place the bites on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.

Notes

For a smoother texture, pulse cottage cheese and oats in a blender before mixing. Store finished bites in an airtight container for up to 4-5 days in the refrigerator. For longer storage, freeze them.
