  • 1 tablespoon honey or maple syrup Optional, to taste, as the fruit adds natural sweetness.
  • 1 teaspoon vanilla extract

Mixing
  1. In a mixing bowl, combine the cottage cheese, oats, lemon zest, honey (if using), vanilla extract, and salt.
  2. Tip: For a very smooth, cohesive bite, pulse the cottage cheese and oats briefly in a food processor (10–15 seconds) before transferring to a bowl.
Folding in Blueberries
  1. Gently fold in the fresh blueberries.
  2. Tip: Use a spatula and fold from the bottom up to avoid crushing the berries.
Forming Bites
  1. Once mixed, use your hands to form small bite-sized balls or bars.
  2. Tip: Slightly dampen your hands to prevent sticking; aim for 1–1.5 inch balls.
Chilling
  1. Place the bites onto a lined baking sheet and refrigerate for at least 30 minutes to firm up.
