- In a medium saucepan, combine the water and sugar over medium heat. Stir until the sugar has completely dissolved.
- Remove the saucepan from the heat and let it cool for a few minutes.
- Once cooled, add the lemon juice and lemon zest to the mixture and stir well.
- Pour the mixture into a shallow dish and place it in the freezer.
- After about 30 minutes, stir the sorbet with a fork to break up any ice crystals. Return to the freezer.
- Repeat this process every 30 minutes until the sorbet is fully frozen and has a light, fluffy texture.
Notes
For an ultra-smooth texture, use a blender for mixing the ingredients. Avoid over-stirring during the freezing process to prevent it from becoming too icy. If the sorbet is too hard after freezing, let it sit at room temperature for a few minutes to soften before serving. You can also add pureed fruits like strawberries or raspberries for a different flavor or swap some lemon juice with lime juice for a unique twist. Store in an airtight container in the freezer for up to a month, though best enjoyed within two weeks.
