Ingredients
  

For the fries
  • 4 large Russet potatoes
  • Oil for frying or baking
  • Salt
For the garlic parmesan topping
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, finely minced
  • 1 teaspoon garlic powder (optional)
  • 1 cup grated parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper
Optional toppings
  • Shredded mozzarella cheese
  • Crispy bacon bits
  • Ranch or sour cream
  • Chili flakes
  • Green onions

Method
 

Preparation
  1. Wash and cut the potatoes into even sticks. Soak them in cold water for 30 minutes to remove starch. Drain and dry completely.
Cooking the fries
  1. Deep fry at 350°F until golden and crispy, or bake at 425°F for 30 to 35 minutes, or air fry at 380°F for 18 to 22 minutes. Make sure they are crispy and golden.
Making garlic butter
  1. Melt butter on low heat. Add garlic and cook for 1 to 2 minutes until fragrant. Do not burn it.
Seasoning the fries
  1. Place hot fries in a bowl. Add garlic butter and toss well. Add salt, pepper, and parmesan cheese while fries are still hot.
Adding toppings
  1. Add mozzarella, bacon, parsley, or any toppings you like. Serve immediately.

Notes

Dry potatoes well before cooking for extra crispiness. Do not overcrowd the fryer or oven. Use freshly grated parmesan for better melt and flavor. Toss fries while hot so seasoning sticks well.
