Ingredients

  • 4 large russet potatoes Choose firm, evenly sized tubers for consistent baking.
  • 1 cup shredded cheddar cheese Sharp or mild cheddar works; shred from a block for best melting.
  • ½ cup cooked and crumbled bacon alternative Suggested turkey bacon or plant-based substitute.
  • ¼ cup sour cream Use plain, full-fat or Greek yogurt for creaminess.
  • 2 stalks green onions Include both white and green parts for flavor.
  • 3 tablespoons olive oil Extra virgin is recommended for better flavor.
  • to taste salt and pepper Kosher salt and freshly ground black pepper preferred.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Scrub the potatoes and prick them with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt.
Baking Potatoes
  1. Bake for about 45-60 minutes, until tender.
  2. Let cool slightly, then cut in half and scoop out some of the flesh.
Final Assembly
  1. Brush the insides with olive oil, and season with salt and pepper.
  2. Return to the oven for 10 minutes to crisp up.
  3. Fill with cheese and bacon alternative, then bake until cheese is melted.
  4. Top with sour cream and green onions before serving.

Notes

Best paired with dipping sauces or served with a salad for a heartier meal. Store leftovers in the refrigerator or freeze for longer shelf life.
