  • 2 large large firm, ripe bananas about 240g total
  • 2–3 tablespoons natural creamy peanut butter unsweetened
  • 2 tablespoons roasted unsalted peanuts roughly chopped
  • ¼ cup dark chocolate chips 70% cacao or higher
  • 1 teaspoon coconut oil
  • sea salt flakes optional

Method
 

Preparation
  1. Peel the bananas and slice them into thick coins, about 1/2 inch each.
  2. Arrange the banana slices on a parchment-lined baking sheet, ensuring they do not touch.
  3. Freeze the banana slices for about 15-20 minutes until they are firm.
Assembly
  1. Spread about 1/2 teaspoon of peanut butter on each frozen banana coin.
  2. Sprinkle roughly chopped peanuts and sea salt on each banana round.
Chocolate Coating
  1. In a microwave-safe bowl, combine dark chocolate chips and coconut oil.
  2. Microwave in 15-second intervals until melted and smooth, stirring after each interval.
  3. Drizzle melted chocolate over each banana bite or dip the tops into the chocolate.
Final Freeze
  1. Return the tray to the freezer for an additional 30-60 minutes until the chocolate is set.
Serving
  1. Let the frozen bites sit at room temperature for about 5 minutes before serving.
  2. Store leftovers in a freezer-safe container.
