  • 1 lb ground beef Can substitute with ground turkey or chicken.
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or ~2 tbsp homemade taco mix) Check for added sugars if strict keto.
  • 1 can diced tomatoes, drained Draining helps avoid excess moisture.
  • 1 cup shredded cheese Cheddar or Mexican blend.
  • 1 cup cauliflower rice Can use shredded or spiralized zucchini for lower carbs.
Taco Toppings
  • to taste shredded lettuce
  • to taste sour cream
  • to taste sliced avocado
  • to taste chopped cilantro
  • to taste lime wedges
  • to taste jalapeños
  • to taste salsa

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium-high heat, add the ground beef and cook until mostly browned, breaking it up with a spoon.
  3. Add diced onions and minced garlic during the last few minutes; cook until onions are translucent.
  4. Drain excess fat if desired.
  5. Stir in taco seasoning and drained diced tomatoes. Reduce heat and simmer for 3–4 minutes.
  6. In a baking dish, make a base layer of cauliflower rice and spoon the seasoned beef mixture evenly over it.
  7. Sprinkle shredded cheese over the top.
Baking
  1. Bake for 20 minutes or until cheese is melted and bubbly.
  2. For a crisper top, broil for 1–2 minutes while watching carefully.
Serving
  1. Serve hot, topped with your favorite taco toppings.

Notes

For a vegetarian option, swap beef with seasoned crumbled tofu or cooked lentils. Store leftovers in an airtight container for 3-4 days or freeze for up to 3 months. Reheat as needed. Consider using individual muffin cups for easy meal prep.
