Mango Coconut Popsicles

These refreshing Mango Coconut Popsicles are made with ripe mangoes and creamy coconut milk, perfect for cooling down on a warm day.

  • 2 cups Fresh or frozen mango Using ripe mangoes will enhance flavor.
  • 1 cup Coconut milk Unsweetened coconut milk can be used.
  • 1 tablespoon Lime juice Use fresh lime juice for best flavor.

Method
 

Preparation
  1. In a blender, combine the fresh or frozen mango, a splash of coconut milk, and a squeeze of lime.
  2. Blend the mixture on high speed until it achieves a smooth consistency. If chunkier texture is preferred, pulse a few times.
  3. Carefully pour the mango mixture into popsicle molds, filling them only partially to allow for expansion when freezing.
  4. Place the molds in the freezer and allow them to freeze for at least 4 to 6 hours or until completely solid.
  5. Once frozen, remove the popsicles from the molds. Use warm water to help release them if needed.

Notes

These popsicles can be wrapped individually in plastic wrap or placed in a freezer-safe bag for storage. They can be made ahead of time for gatherings and will last up to three months in the freezer.
