  • 2 cups mixed beans (black beans, kidney beans, garbanzo beans) Rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 medium red onion, finely diced
  • 1 piece bell pepper (any color), diced
  • 1 cup corn (fresh or frozen)
  • ΒΌ cup fresh cilantro, chopped
For the Dressing
  • 2 tablespoons olive oil
  • Juice of 2 limes lime juice
  • 1 teaspoon cumin
  • salt and pepper to taste

Preparation
  1. Start by rinsing and draining your mixed beans thoroughly to remove any excess sodium. While the beans drain, chop the cherry tomatoes, onion, bell pepper, and cilantro.
Dressing Preparation
  1. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper. If you'd prefer a creamier dressing, feel free to blend the mixture until smooth.
Combining the Salad
  1. In a large mixing bowl, combine the drained beans, diced vegetables, and chopped cilantro. Pour the lime dressing over the top.
  2. Using a spoon, gently toss all ingredients together until everything is evenly coated with the dressing.
Marinating and Serving
  1. Let the salad marinate in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld beautifully.

Notes
