  • 6 large large eggs
  • 1 cup milk
  • 1 cup diced tomatoes
  • 1 cup spinach, chopped
  • ½ cup feta cheese, crumbled
  • ½ cup bell peppers, diced
  • ½ cup red onion, diced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for greasing

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease a baking dish with olive oil.
  3. Whisk together the eggs and milk in a large bowl until fully combined.
  4. Stir in the diced tomatoes, chopped spinach, crumbled feta cheese, diced bell peppers, diced red onion, dried oregano, salt, and pepper.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
Baking
  1. Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is golden brown.
  2. Let the casserole cool slightly before slicing and serving.

Notes

You can experiment with various vegetables like zucchini or mushrooms. Roasting your vegetables beforehand enhances their flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days, or frozen in portions for up to 2 months.
