Ingredients
  

Pasta and Chicken
  • 8 oz pasta (bowtie or rotini) Cooked al dente
  • 2 pieces grilled chicken breasts, sliced Use cooked grilled chicken
Vegetables
  • 1 cup cherry tomatoes, halved Fresh and ripe
  • 1 cup cucumber, diced Refreshing crunch
  • 1 piece bell pepper, diced Any color bell pepper works
  • ¼ cup red onion, thinly sliced For a mild flavor, soak in water first
  • ¼ cup olives, sliced Black or green olives as preferred
Dressing
  • ¼ cup olive oil Extra virgin is recommended
  • 2 tablespoons lemon juice Adjust for more tanginess
  • 1 teaspoon dried oregano Adds Mediterranean flavor
  • to taste salt and pepper Adjust according to preference
Cheese
  • ½ cup feta cheese, crumbled Can substitute or omit based on preference

Method
 

Cooking the Pasta
  1. Boil water in a large pot. Add a pinch of salt and cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
Combining the Ingredients
  1. In a large mixing bowl, combine the cooked pasta, grilled chicken, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and olives. Toss gently to mix.
Making the Dressing
  1. In a small mixing bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
Tossing the Salad
  1. Pour the dressing over the salad ingredients and toss until evenly coated.
Serving
  1. Serve chilled or at room temperature. Refrigerate for 30 minutes for flavors to meld before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Keep dressing separate until serving to maintain freshness. Not recommended for freezing.
