Method
 

Cooking
  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Season the chicken breasts generously with salt, pepper, dried oregano, and lemon zest.
  3. Add the seasoned chicken breasts to the skillet and cook for 5-7 minutes on each side, or until golden brown and cooked through.
  4. Add minced garlic to the skillet when the chicken is nearly done, sautéing for an additional minute.
  5. Stir in the lemon juice, chopped artichokes, and sliced olives.
  6. Allow the mixture to simmer for about 5 minutes.
  7. Before serving, sprinkle freshly chopped parsley on top and serve over rice, quinoa, or with crusty bread.

Notes

This dish can be roasted in the oven for a crispy skin. Try adding sun-dried tomatoes or capers for additional flavor.
