Ingredients
  

Pasta and Fresh Vegetables
  • 8 oz pasta (penne or fusilli)
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 cup spinach
Flavors and Seasoning
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste Salt and pepper
Liquid
  • 2 cups vegetable broth or water
Toppings
  • Grated Parmesan cheese (optional)

Method
 

Preparation
  1. Chop your vegetables and measure out the pasta and broth.
Cooking
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Incorporate the halved cherry tomatoes, diced zucchini, and bell pepper into the pot. Cook for 3-4 minutes.
  4. Stir in the pasta, dried oregano, basil, salt, and pepper.
  5. Add the vegetable broth or water to the pot and bring everything to a vigorous boil.
  6. Once boiling, reduce the heat, cover, and simmer for 10-12 minutes, or until the pasta is cooked al dente.
  7. Stir in the spinach until wilted.
  8. Plate your Mediterranean One Pot Pasta warm and sprinkle with grated Parmesan cheese if desired.

Notes

You can prepare this dish in advance and store it in an airtight container for up to 3 days. To freeze, let the pasta cool before portioning it into freezer-safe bags. It should keep for up to 2 months.
