Ingredients
  

For the Crisps
  • 1 cup fresh spinach, chopped
  • ½ cup feta cheese, crumbled
  • ½ cup all-purpose flour Substitute with gluten-free flour blend if needed
  • ¼ cup olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • as needed Water Add gradually to form the dough

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine chopped spinach, crumbled feta cheese, flour, olive oil, garlic powder, salt, and pepper. Mix well.
  3. Gradually add water, little by little, until a dough forms. The dough should be slightly sticky but manageable.
  4. On a floured surface, roll out the dough to about 1/4 inch thick.
  5. Using a cookie cutter or knife, cut the dough into small shapes.
  6. Place the shapes onto a baking sheet lined with parchment paper, making sure they are spaced apart.
Baking
  1. Bake for 12-15 minutes or until golden brown, keeping an eye on them to avoid burning.
  2. Allow the crisps to cool slightly on a rack before serving.

Notes

Consider adding sun-dried tomatoes or herbs like dill or oregano for additional flavor. Store in an airtight container at room temperature for up to three days or freeze for longer storage.
