  • 2 cups cooked turkey, shredded or sliced Use leftover turkey for best flavor.
  • 1 cup cheese (your choice: mozzarella, cheddar, or a mix) Choose your favorite cheese.
  • ½ cup mayonnaise (or Greek yogurt for a healthier option) Mayonnaise gives creaminess.
  • 1 tablespoon mustard Optional for additional tanginess.
  • 1 cup fresh spinach or mixed greens Add greens for crunch and nutrition.
  • 4 slices whole-grain or sourdough bread Either type works well for toasting.
  • 1 whole ripe avocado, sliced Optional for added creaminess.
  • Salt and pepper to taste Adjust seasoning as preferred.
  • Olive oil or butter, for toasting Use for a golden crust.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the cooked turkey, cheese, mayonnaise, and mustard (if using). Mix until well combined. Add salt and pepper to taste.
  3. Lightly butter one side of each slice of bread.
Assembling the Sandwich
  1. Place the slices butter-side down on a baking tray.
  2. Layer the turkey mixture evenly over half of the bread slices, then top with fresh spinach and avocado slices if desired.
  3. Cover with the remaining slices of bread to make sandwiches.
Baking
  1. Place the tray in the oven and bake for about 10-15 minutes, or until the cheese is melted and the bread is toasted.
  2. Optional: Broil the sandwiches for the last 2 minutes for a crispy top.
Serving
  1. Remove from the oven, allow to cool slightly, then cut diagonally and serve warm.
  2. Pair with a side of fresh salad for a complete meal.

Notes

For added flavor, mix in herbs like dill or oregano to the turkey mixture. To prevent soggy bread, ensure the turkey mixture isn’t too wet.
