- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and minced garlic, sauté until softened (about 3–4 minutes).
- Add the ground beef, breaking it apart, and cook until browned.
- Stir in the rice, black beans, diced tomatoes, corn, beef broth, chili powder, cumin, salt, and pepper.
- Bring to a boil, then reduce heat to low and cover.
- Simmer for about 20 minutes, until rice is cooked and liquid is absorbed.
- Fluff with a fork, serve warm.
Notes
For meal prep, divide into four 2-cup portions or into six smaller 1 to 1.5-cup servings. Store leftovers in airtight containers for up to 3–4 days.
