  • 1 lb ground beef Use 85/15 or 80/20 for optimal flavor.
  • 2 medium zucchinis, sliced Choose firm zucchinis for best texture.
  • 1 small onion, diced Sauté until translucent.
  • 2 cloves garlic, minced Be careful to not burn the garlic.
  • 1 can diced tomatoes With or without green chilies based on preference.
  • 1 tbsp chili powder Adjust based on preferred spice level.
  • 1 tsp cumin
  • to taste salt and pepper
  • 1 cup shredded cheese (optional) Use for a creamy finish.
  • for garnish Fresh cilantro Optional for garnish.

Method
 

Cooking
  1. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat if necessary.
  2. Add the diced onion and minced garlic to the skillet, cooking until the onion is translucent.
  3. Stir in the sliced zucchinis and cook for about 5–7 minutes, until they are tender.
  4. Add the diced tomatoes, chili powder, cumin, salt, and pepper. Stir well and let everything simmer for about 5 more minutes.
  5. If using cheese, sprinkle it over the top and let it melt.
  6. Garnish with fresh cilantro if desired and serve hot.

Notes

For variations, consider roasted zucchini for deeper flavor, or add grains and beans for a heartier meal. Enjoy with tortillas or over rice.
