Method
Prepare the Crust
- In a mixing bowl, combine the graham cracker crumbs with the melted butter until the mixture resembles wet sand.
- Press the crumb mixture firmly into the bottom of your serving cups. Set aside to firm up.
Make the Filling
- In another bowl, use a hand mixer to beat the cream cheese until smooth and creamy.
- Gradually add the powdered sugar, mixing thoroughly until there are no lumps.
- Blend in the fresh Key lime juice and lime zest. For color, add green food coloring if desired.
Assemble the Cups
- Spoon the filling gently over the graham cracker crust in each cup, leaving a little space at the top.
Chill the Cups
- Place the assembled cheesecake cups in the refrigerator and let them chill for at least two hours.
Serve
- Before serving, top each cheesecake cup with a dollop of whipped cream and a fresh lime slice.
Notes
These cheesecake cups can be stored in the refrigerator for up to 3 days. Freeze filling and crust separately if needed. Add whipped cream before serving for optimal presentation.
