Ingredients
  

For the crust
  • 1 cup graham cracker crumbs Can be pre-made or crushed at home.
  • ¼ cup melted butter
For the filling
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar Can be substituted with a sugar alternative.
  • ¼ cup Key lime juice Regular lime juice can be used but alters flavor.
  • 1 tsp lime zest
  • Green food coloring (optional) For color enhancement
For serving
  • whipped cream For topping.
  • lime slices For garnish.

Method
 

Prepare the Crust
  1. In a mixing bowl, combine the graham cracker crumbs with the melted butter until the mixture resembles wet sand.
  2. Press the crumb mixture firmly into the bottom of your serving cups. Set aside to firm up.
Make the Filling
  1. In another bowl, use a hand mixer to beat the cream cheese until smooth and creamy.
  2. Gradually add the powdered sugar, mixing thoroughly until there are no lumps.
  3. Blend in the fresh Key lime juice and lime zest. For color, add green food coloring if desired.
Assemble the Cups
  1. Spoon the filling gently over the graham cracker crust in each cup, leaving a little space at the top.
Chill the Cups
  1. Place the assembled cheesecake cups in the refrigerator and let them chill for at least two hours.
Serve
  1. Before serving, top each cheesecake cup with a dollop of whipped cream and a fresh lime slice.

Notes

These cheesecake cups can be stored in the refrigerator for up to 3 days. Freeze filling and crust separately if needed. Add whipped cream before serving for optimal presentation.
