  • 1-2 medium-sized Cucumbers Fresh, for slicing
  • 1 pint Cherry Tomatoes Washed and halved
  • 8 ounces Mozzarella Cheese Preferably fresh, diced
  • 1 handful Fresh Basil Torn into small pieces
Dressings and Seasoning
  • Olive Oil For drizzling
  • Balsamic Vinegar To taste
  • Salt & Pepper For seasoning

Method
 

Preparation
  1. Wash the cucumbers and cherry tomatoes thoroughly. Slice the cucumbers into thin rounds or half-moons. Cut the cherry tomatoes in half.
  2. In a large mixing bowl, combine the sliced cucumbers, halved cherry tomatoes, and diced mozzarella cheese.
  3. Tear fresh basil leaves into small pieces and add them to the bowl.
  4. Generously drizzle olive oil over the salad, followed by a splash of balsamic vinegar.
  5. Add salt and pepper to taste and gently toss all ingredients together until well-coated.
  6. Serve immediately while fresh.

Notes

For an extra kick, consider adding crushed red pepper flakes or chopped chili. You can substitute mozzarella with feta or goat cheese for variation.
