Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, combine the melted butter with the mashed bananas. Mix well until smooth.
- Add the baking soda and salt; stir to incorporate.
- Mix in the sugar, beaten egg, and vanilla extract until combined.
- Gradually fold in the all-purpose flour until just mixed, being careful not to overmix.
Baking
- Spoon half of the batter into the muffin cups, then add a generous dollop of Nutella. Top with the remaining batter and swirl lightly with a toothpick.
- Bake for about 18-20 minutes, or until a toothpick comes out clean.
- Allow to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
Notes
For best results, use very ripe bananas and avoid overmixing the batter. You can add chocolate chips or nuts for extra flavor. Store in an airtight container for up to 3 days or freeze for up to 2 months.
